Ingredients:
400gm of sliced pork belly (no skin or bones)
1 1/2 tablespoons of fish sauce
1 teaspoon of castor sugar
2 tablespoons of cornflour
2 tablespoons of all purpose flour
1/2 teaspoon white pepper
Cooking oil
How to cook the pork
Pat the pork dry using a paper towel.
Cut into 2cm size chunks/pieces, put the pork in a bowl and add the fish sauce, sugar and white pepper. Massage through till the sugar is dissolved.
In a separate bowl mix the flour together then add the pork ensuring it is all covered in the flour and no pieces are sticking together, you can add a little more flour if you need to the pieces should be coated in flour enough that they don't stick together.
Leave to sit while the oil heats.
I use a large electric wok to cook the pork. Use enough oil to cover the pork as it cooks. Once the oil is hot (use a piece of pork to make sure oil is hot enough - should bubble around the pork when ready). Add pork to oil - don't crowd the oil with pork as this will make the pork greasy. Remove as soon as the pork is just cooked. Place to one side on a plate with a paper towel covering the plate to absorb any excess oil.
Leave to completely cool while you make the sauce.
Once sauce is made and the pork is cooled. Reheat the oil and cook pork till crispy and golden brown.
